Riz 3a Djej (Middle Eastern Chicken & Rice with Nuts) is a comfort dish served during family gatherings and special occasions. It combines spiced shredded chicken and fragrant rice topped with golden pine nuts and almonds. Using Aseel Pure Ghee elevates its depth and brings out traditional flavor notes in every spoonful.
Ingredients
- 1 whole chicken (about 1.5kg), cleaned
- 2 cups long grain rice, rinsed and soaked 30 mins
- 2 tbsp Aseel Pure Ghee
- 1 cinnamon stick
- 2 bay leaves
- 1 tsp allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp black pepper
- Salt to taste
- 1/4 cup pine nuts
- 1/4 cup slivered almonds

How to Make
- Boil the chicken in a pot with bay leaves, cinnamon stick, and salt until cooked. Remove, shred and set aside. Reserve broth.
- In a large pan, melt Aseel Ghee and sauté rice for 2–3 minutes. Add allspice, cinnamon, pepper, and 4 cups of broth.
- Bring to a boil, lower heat, and cover. Cook for 20 minutes until rice is fluffy.
- Fry nuts in ghee until golden. Set aside.
- Layer rice and chicken on a serving platter. Garnish with toasted nuts and serve hot.
